Vegan banana, oat and chocolate muffin

Ingredients
  

  • 3 bananas
  • 1 cup of rolled oats
  • ½ cup self-raising flour
  • 1 tsp baking powder
  • 1 Tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 small apple grated
  • ½ cup almond milk
  • ½ cup chopped dark chocolate 85% coa
  • 2 tbs raisins or sultanas optional

Method
 

  1. Preheat the oven to 180°C.
  2. Mash the bananas with a fork. Add the oats, flour, baking powder, cocoa powder, vanilla and cinnamon. Combine, then add the grated apple, almond milk and mix well.
  3. Fold in the chopped chocolate and raisins, if used.
  4. Fill silicone cups or a muffin tin lined with paper baskets with the mixture and bake for about 20 minutes until golden.
  5. Let them cool for 5 minutes in the tin then transfer them to a wire rack to cool.
