Vegan chocolate and hazelnut oat cookies

Chocolate and hazelnut is a classic combo so it’s no wonder these vegan chocolate and hazelnut oat cookies are super yummy. They are sugar-free and fat-free too as the bananas provide enough oil and moisture for the baking. If you’d prefer a more intense flavour, dry-fry or roast the hazelnuts for a few minutes, before chopping them. The cookies are perfect with morning coffee or as snacks during the day.

Ingredients
  

  • 3 small or 2 large ripe bananas
  • 1 cup rolled oats gluten-free if needed
  • 3 Tbsp of cocoa powder
  • ½ cup chopped hazelnuts
  • ½ tsp ground cinnamon optional
  • 1 tsp vanilla paste or extract

Method
 

  1. Mash the bananas with a fork or process them in a small blender.
  2. Add the other ingredients and combine until you get a malleable mixture ( you might need to add more oats). Let it rest for 10 minutes.
  3. Turn the oven on to 180°C and line a baking tray with parchment paper.
  4. Make 6-8 equal sized balls from the mixture, then press them slightly between your palms.
  5. Put the cookies on the prepared baking tray.
  6. Bake in the middle of the oven for about 10-15 minutes until golden.
  7. Cool the cookies on a wire-rack then serve.
