Vegan gluten-free banana cookies

These gluten-free banana cookies are also dairy-free, egg-free and refined sugar-free. Most importantly they are yummy and easy to make! They are lovely and healthy snacks during the day or ideal for kids parties!

Ingredients
  

  • 2 medium bananas
  • 1 cup brown rice flour
  • 1 tsp baking powder
  • 2 Tbsp agave syrup cold pressed
  • 1 Tbsp sunflower oil cold pressed
  • ½ Tbsp ground cinnamon

Method
 

  1. Preheat the oven to 200°C.
  2. Line a baking sheet with baking paper.
  3. Puree the bananas in a blender then spoon it into a mixing bowl.
  4. Add the oil and the agave nectar, mix well. Add the flour, baking powder and cinnamon and mix with a wooden spoon.
  5. Spoon little dumplings onto the baking sheet, then flatten these slightly with the base of the spoon. (Or form balls from the mixture and flatten them between your palms.)
  6. Bake until golden brown for about 15 minutes then move to a wire rack to cool.
