Vegan oat bar cookies

These vegan oat bar cookies are really healthy - they're gluten-free, sugar-free, dairy-free, egg-free and fat-free - yet absolutely delicious! They are just like oat or muesli bars in cookie format (which takes less time to bake!).You can eat them lukewarm for breakfast or let them cool  for snacking during the day.

Ingredients
  

  • 3 small or 2 large ripe bananas
  • 1 large apple grated
  • 1.5 cup rolled oats
  • ½ tsp ground cinnamon
  • ½ tsp mixed spice
  • 3 Tbsp mixed seeds and dried fruits
  • 1 tsp rapeseed oil

Method
 

  1. Mash the bananas with a fork or blend them in a blender.
  2. Add the oats, grated apple and spices. Mix well. Add more oats if needed. You’ll need to have a thick but malleable dough. Let it rest until the oven warms up.
  3. Turn the oven temperature to 180°C.Line a baking tray with parchment paper.
  4. Make equal sized balls from the mixture and flatten these slightly between your palms.
  5. Put them on a baking tray, then bake in the oven for about 15- 20 minutes until golden.
  6. Let them cool in the tray for 5 minutes, them move them to a wire rack.
