Vegan sweet potato fritters

These vegan sweet potato fritters are really easy to make, particularly if you have a spiralizer (if you don’t just use  cheese grater or shredder).  They are perfect for snacking during the day or  you can serve them as nibbles with aperitif.

Ingredients
  

  • 1 sweet potato spiralised or grated
  • 1 Tbsp chickpea flour
  • 1 Tbsp cold water
  • 1 clove of garlic minced
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp paprika
  • ¼ tsp turmeric
  • Pinch of chilli powder or more to taste
  • 1 Tbsp chopped coriander leaves
  • Oil to cook
  • To serve: 2 spring onions finely chopped

Method
 

  1. Mix the sweet potato with all the other ingredients. You should get sticky mixture.
  2. Heat some oil in wok or frying pan. When the oil is hot, add small spoonfuls of the mixture, flatting them slightly with the base of the spoon.
  3. Fry for a minute or so, then turn them over and fry until golden and crispy.
  4. Drain them on paper kitchen towels.
  5. Baked version: Preheat the oven to 200°C. Line a baking tray with baking paper.
  6. Add dollops of the mixture, then flatten them slightly with the spoon. Spray each with a little oil, then bake them for 10 minutes or so until crispy and golden.
  7. Serve the fritters warm or at room temperature.
