Boil water in a vessel.
Add 1 tsp oil and 1 tsp salt to the water.
Add noodles to the boiling water. Stir now and then to prevent the noodles from sticking together.
Do not overcook the noodles. Noodles should be firm but not hard.
Drain the noodles in a colander and run cold water over it to prevent from sticking.
Cut the vegetables into thin strips and keep aside.
Heat oil in a pan, add chopped garlic and sauté for 2 seconds.
Add onions and sauté for few more seconds on a high flame.
Add all the vegetables and sauté them on high flame. They should not be over cooked and should retain the crunchiness.
Add soya sauce, chilli sauce, vinegar and mix well.
Add the cooked noodles, salt, pepper and toss everything together, so that the noodles get coated with the sauces well.
Switch off the flame and garnish with the spring onion greens.
Transfer to serving bowl and serve hot.
