Venison steak with mushroom and Stilton sauce

Venison steak is really easy to cook, so it's an ideal ingredient to use during the winter season. This Venison steak with mushroom and Stilton sauce has an extra edge, created by the salty cheese sauce which makes it an ideal dish for a laid-back dinner party. Serve it with a mash and/or a seasonal salad.

Ingredients
  

  • 2 venison steaks
  • 100 g mushrooms thinly sliced
  • 1 Tbsp olive oil
  • 3 Tbsp reduced-fat crème fraîche
  • 50 g stilton cheese crumbled

Method
 

  1. Thinly slice the mushrooms.
  2. Heat the oil in a non-stick frying pan. Add the steaks to the pan, season with salt, and fry for around 1-3 mins on each side (depending on your liking and the thickness of the meat).
  3. Remove the steaks and keep warm under cover.
  4. Add the mushrooms to the pan and fry for about 5 minutes. Add the crème fraîche and stilton and stir gently for 1 minute until it reduces to a thick, creamy sauce.
  5. Serve the venison steaks with the sauce poured over it. Season with freshly ground black pepper.
