Slice the venison into longish, thin pieces and mix together thoroughly with the marinade.
Heat a wok, then add 2 Tbsp ground nut oil, followed by the venison. Stir-fry for a minute or two, then set aside, covered.
Add another Tbsp of ground nut oil to the reheated wok then add the chiles and peppers. Stir-fry for a minute or two before adding the garlic, followed shortly by the venison. Reheat for another minute.
Finally, the coriander and soy sauce should be added and stir-fried for about half a minute. Then take off the heat, stir through the sesame oil and serve with steamed rice or noodles.
