Wholesome Caesar salad

The disadvantage of the popular Caesar salad is that it has a very high caloric content. However, with few modifications, the calories can be reduced significantly. This Wholesome Caesar salad is a perfect example -  it’s made with yogurt  (instead of mayo) and wholemeal bread. It’s still very delicious. Perfect for summer garden parties.

Ingredients
  

  • 1 Romaine lettuce
  • 2 thick slices of wholemeal or gluten-free bread
  • 6 slices of anchovies marinated in oil or vinegar
  • 1 clove of garlic
  • For the Dressing:
  • 2 slices of anchovies
  • 1 clove of garlic minced
  • 1 tsp Dijon mustard
  • 3 tbsp Greek or creamy natural yogurt
  • 1 Lemon juiced
  • Salt & pepper
  • To serve: Grated Parmesan

Method
 

  1. Gently separate the leaves from the core, then rinse and dry them with a clean tea towel.
  2. Toast the bread, then rub them with the garlic. When cool, cut them into small croutons.
  3. Using a pestle and mortar, make a paste from the anchovies, garlic and mustard. Mix with the yoghurt, then season with salt &pepper. Taste and add some lemon juice to your liking.
  4. Arrange the salad leaves in a serving bowl, add the anchovy slices, then scatter the croutons on top. Pour over the dressing and sprinkle with a little Parmesan.
