Yogurt and pomegranate dessert

This yogurt dessert with pomegranate is one of my favourite healthy desserts during the festivities because I can add nuts or crumbled cookies to it according to the occasion. I’ve made this one with maple syrup and mint, but  you can make it with honey and add  crushed pistachios, walnuts, pumpkin seeds or crumbledAmaretti cookies, gingerbread biscuits and so on. This simple version is perfect for breakfast or brunch too!

Ingredients
  

  • 1 cup of Greek yoghurt
  • 1 Tbsp maple syrup or runny honey
  • 2 Tbsp pomegranate seeds
  • About 1 tsp pomegranate molasses
  • 1 tsp baby mint leaves

Method
 

  1. Whisk the yogurt together with the maple syrup or honey until light and fluffy.
  2. Mix in half of the pomegranate seeds, then drizzle the top with some pomegranate molasses and swirl this through the yoghurt with a toothpick.
  3. Scatter the remaining pomegranate seeds and some mint leaves on the top, then serve.
