Zesty Green Olives

I always stand amazed and amused in front of the deli counters at the supermarket looking at the olives' prices ! They charge a fortune for a pot of marinated olives – which can be made so easily at home using standard, cheap an cheerful olives in brine, sold in large jars. The recipe of these zesty green olives is a good example - ready in just 5 minutes - they are perfect nibbles and can save you a fortune!

Ingredients
  

  • 2 cloves garlic
  • 2 sprigs of rosemary
  • 1 lemon
  • 2 Tbsp extra-virgin olive oil
  • Big pinch dried red pepper flakes optional
  • 150 g green pitted olives (in brine) 1 bay leaf
  • 1 bay leaf

Method
 

  1. Peel and cut the garlic in half lengthwise. Finely chop the rosemary. Zest and juice the lemon. Mix these well then add the drained olives and oil. Season with salt and pepper. Add the bay leaf and chilli flakes if used. Combine well.
  2. Chill for at least an hour if you can, preferably overnight.
  3. Alternatively transfer to a sterilised jar, seal well and refrigerate - this should keep for a couple of weeks.
