Background

If you like South-East Asian food save this zingy cucumber salad recipe in your folder as it will be a very useful condiment for all sorts of dishes. It only takes 5 minutes to make!

Ingredients

1 cucumber
2 Tbsp rice vinegar
2 Tbsp toasted sesame oil
1½ tsp palm or unrefined cane sugar
1 small clove garlic
2 tsp grated ginger
4 spring onions
1 handful coriander (cilantro) leaves
1 handful mint leaves

Instructions

Wash the cucumber, remove the ends and cut in half lengthwise. Using a spoon scrape the seeds out and discard.
Slice the cucumber into half-moon-shaped pieces then put them in a serving dish.
Mix the vinegar with the sugar and oil. Grate the garlic & ginger and add to the dressing.
Remove the seeds and veins of the chilli, chop the flesh finely and add to the cucumber.
Slice the spring onion diagonally, then add to the cucumber.
Chop the herbs, add to the salad.
Pour the dressing over the salad, toss well.
