Background

This balsamic broccoli and green peas soup is ready in just 15 minutes. It’s healthy, vegan, gluten-free and low-carb too. Most importantly it’s really yummy and easy to make. It’s perfect for cleansing or in a health-conscious diet.

Ingredients

1 leek
1 Tbsp olive oil
2 cloves of garlic
1 head broccoli
2 cups green peas
500 ml vegetable stock
1 handful basil
1 Tbsp balsamic vinegar
Balsamic glaze and basil leaves to serve

Instructions

Slice the leek and roughly chop the broccoli
Heat the oil in a large saucepan and gently sauté the leek for about 7 minutes,.
Add the garlic and stir for a minute.
Add the broccoli, then pour in the stock and bring to the boil.
Gently simmer for 10-12 minutes, until tender, then add the peas and cook for another 5 minutes.
Turn off the heat. Add the balsamic vinegar and basil leaves.
Using a stick-blender, process the soup until you get a textured soup. Add more stock if it’s too thick.
Serve with a few basil leaves and some balsamic glaze or vinegar drizzled on top.
