Background

These black bean and courgette patties are perfect for a spicy vegan or vegetarian burger, just add the usual condiments. I prefer wrapping them in tortilla with salsa and chilli sauce. Perfect for laid-back parties, summer barbecues etc. If you make the patties small, they make nice party nibbles or appetizers too!

Ingredients

1 red onion, grated
2 clove2 of garlic, minced
1 chilli, finely chopped
1 tsp cumin
1 tin black beans, drained
1 small courgette, roughly grated
2 tsp chia seeds or ground flaxseed
1 lemon or lime, zested

Instructions

Mash the beans with a fork in a mixing bowl. Add the other ingredients, season and combine well.
Divide the mixture into 4 or 6 equal portions and form patties. Put these on a plate, cover and chill until you’re ready to cook them.
Heat a grill, griddle pan or frying pan.
Spray the patties with oil then cook them until golden.
Serve warm.
