Blood orange, oat and almond waffles
Background
This blood orange, oat and almond waffles are full of fiber and other nutrients, so perfect for those who look after their health. Instead of the caramelized orange, you can serve them with other toppings, such as compote, marmalade, orange curd or orange blossom honey. If you don’t have blood oranges just use normal ones!
Ingredients
- 1 cup oats
- ½ cup ground almonds
- 1 tsp baking powder
- 2 eggs
- 1 cup milk (or plant-based milk)
- 1 tsp vanilla extract
- 2 blood oranges
- Honey
Instructions
- Peel one orange and take out the pips.
- Put the orange flesh into a blender. Add the eggs, milk, vanilla and pulse for a few seconds until you get a purée. Add the oats, ground almond and baking powder, then pulse again. Add more milk if needed - you should get a thick, but pourable batter.
- Heat the waffle maker. Once it’s hot, spoon in some batter and seal. Following the machine instructions, cook the waffles for about 3-5 minutes - they should be golden and crispy on the outside, soft inside. You should be able to get 3 or 4 waffles from the mixture (depending on the size of your machine).
- Meanwhile, peel the other orange and cut into thin slices. Heat a drop of oil in a non-stick pan, then add the orange slices. Drizzle with some honey and cook for 2 minutes, then turn them over and cook until they are slightly caramelized.
- Serve the waffles warm with the caramelized orange, the pan jus and a drizzle of honey.
