Ingredients: 200g tenderstem broccoli; 1 Tbsp olive oil; 50g walnuts; 1 large pear; 2 Tbsp balsamic vinegar; 100g mixed leaves (rocket, radicchio, baby spinach, cress etc); 50g feta cheese (optional)

Background

I’m normally not that keen on savoury salads containing fruits but this broccoli and pear salad goes fantastically with roasted poultry - particularly with duck or goose. So this dish is ideal for special occasions and dinner parties.

Ingredients

200g tenderstem broccoli
1 Tbsp olive oil
50g walnuts
1 large pear
2 Tbsp balsamic vinegar
100g mixed leaves (rocket, radicchio, baby spinach, cress etc)
50g feta cheese (optional)

Instructions

Steam the broccoli over boiling water or blanch for 2-3 minutes. Drain.
In the meantime, cut the pear in half, remove the seeds and slice.
Heat the oil in a saucepan, fry the pear slices and walnuts for 2 or 3 minutes until golden. Add the balsamic vinegar, let it bubble for a few seconds, then turn off the heat.
Scatter the salad leaves onto a large plate, arrange the broccoli, pears and walnuts on top. Crumble the feta (if used), then pour over the cooking juices.
