Ingredients: ½ celeriac; 1 medium carrot; 1 small onion; ½ cabbage ( white or red); 3 Tbsp low-fat natural yogurt; 2 Tbsp light mayonnaise; 1 Tbsp Dijon mustard; 2 Tbsp chopped flat-leaf parsley; 2 Tbsp mixed seeds (pumpkin and sunflower)

Background

This celeriac coleslaw goes superbly with grilled meat, burgers, spare ribs and so on. It’s very easy to make - perfect for parties, picnics and barbecues too.

Ingredients

½ celeriac
1 medium carrot
1 small onion
½ cabbage ( white or red)
3 Tbsp low-fat natural yogurt
2 Tbsp light mayonnaise
1 Tbsp Dijon mustard
2 Tbsp chopped flat-leaf parsley
2 Tbsp mixed seeds (pumpkin and sunflower)

Instructions

Peel and thinly slice or shred the celeriac, carrot and onion. Put them in a bowl.
Mix the yogurt with the mayo and mustard. Season with salt and pepper.
Let the salad rest for at least 30 minutes, 2 hours if time allows.
Add the mayo mixture to the slaw together with the chopped parsley and the mixed seeds. Toss well.
Chill the salad for at least 30 minutes before serving.
