Ingredients: 150g mushrooms, chopped; 2 spring onions, chopped; 1 Tbsp spring onion greens, chopped; 3 Green chillies, chopped (or 1 green chilli for less spice); 1" Ginger chopped; 4 Garlic cloves, chopped; 1 tsp White vinegar; 1 tsp Soya sauce; Salt as required; 100g Noodles, thin; 1 Tbsp Oil; ½ tsp Pepper

Background

Chilli mushroom noodles make a quick snack and are very tasty too. When making for kids, one can omit the chillies to make it less spicy. These noodles have a nice piquant kick to them.

Ingredients

150g mushrooms, chopped
2 spring onions, chopped
1 Tbsp spring onion greens, chopped
3 Green chillies, chopped (or 1 green chilli for less spice)
1" Ginger chopped
4 Garlic cloves, chopped
1 tsp White vinegar
1 tsp Soya sauce
Salt as required
100g Noodles, thin
1 Tbsp Oil
½ tsp Pepper

Instructions

Cook the noodles according to the instructions on the packet, run through cold water and set them aside.
In a large wok, heat the oil on high heat. Add ginger, garlic, green chillies and the chopped spring onions. Fry for a minute.
Add the chopped mushrooms and fry for 3 minutes.
Add the noodles and mix.
Add salt, pepper, white vinegar and soya sauce then mix.
Garnish with the chopped spring onion greens.
