Chorizo bites poached in wine
Background
This classic tapas dish is a perfect nibble for drink parties - or serve them with aperitif when you have guests for dinner. Don't use top quality wine for this recipe, a cheap and cheerful Merlot will do.
Ingredients
- 400g cooking chorizo sausage
- 1 bottle of red wine
Instructions
- Chop the chorizo into bite-sized pieces (about 2 cm thick).
- Heat a heavy-based pan, then add the chorizo pieces. Cover completely with wine and bring to the boil.
- Lower the heat and simmer until he wine evaporates completely - it will take about 30 minutes.
- Serve warm or at room temperature with cocktail sticks or toothpicks.
Tips
- You can add spices to the wine such as bay leaf, garlic & chilli.
- Don't worry about the colour of the chorizo - it will turn very dark (and become slightly sticky).
