Background

This courgette & feta frittata is a quick and easy meal for brunch or a weekday supper. Serve it with crusty bread and a leafy salad.

Ingredients

4 eggs
1 Tbsp grated Parmesan
1 small courgette
1 small handful of olives (pitted)
½ tsp dried Italian herbs (or oregano)
1 pinch of dried chilli flakes (optional)
100g feta cheese
salt and pepper

Instructions

Preheat the grill
Beat the eggs with fork in a bowl, add the grated parmesan and season
Slice the courgette into thin rings
Heat the oil in a frying pan and sauté the courgette for a minute or so
Pour in the egg, let it spread out evenly, then turn to low heat and cook for a few minutes.
Cut the feta into small cubes.
When the omelette starts to set around the edge, but is still wet in the middle, add the olives, feta and herbs
Put the pan under the grill for about 5 minutes, until the egg is cooked through and the cheese is golden brown.
Cut into wedges, serve.

Tips

Instead of dried herbs, you can use fresh herbs, for example parsley or basil.
Make sure the frying pan you use has a suitable handle for oven use.
