Background

This crunchy edamame salad goes well with grilled meat, fish and veggies. Alternatively, add it to your lunch box, take it to picnics & trips, or serve them at parties on a buffet table etc.

Ingredients

150g edamame beans
1 handful of radish
5 cm piece cucumber
½ red onion
½ yellow pepper
1 clove of garlic, minced
Salt& pepper
1 Tbsp olive oil
2 Tbsp balsamic vinegar

Instructions

Steam or blanch the edamame beans, then rinse under cold water and put them in a bowl.
Clean the radish, then cut them in half or wedges. Add these to the beans.
Thinly slice the onion and pepper, add these to the salad.
Add the garlic, oil and balsamic, then toss well.
Let it rest for 5 minutes, then serve.
