Background

If you're after an easy yet delicious starter to serve at a dinner party or at a special celebration meal - look no further. This figs & mozzarella salad is served with a spiced port dressing that makes is absolutely delicious. The syrup can be made in advance (it only takes 10 minutes), then throwing together the salad requires only another couple of minutes! Perfect!

Ingredients

6-8 figs
2 Tbsp red wine vinegar
150 ml red port
1 cinnamon stick
2 star anise
about 100 rocket ( arugula)
250g buffalo mozzarella

Instructions

Mix the port, vinegar, cinnamon and anise in a saucepan. Bring to the boil then simmer until it's reduced to a thick sauce. This will take about 10 minutes. Let it cool.
Cut the figs in half or wedges.
Scatter some salad leaves onto plates. Dip the figs into the sauce (cut-side down), then put these on top of the salad.
Drain the mozzarella, then using your fingers tear it into small chunks. Scatter these around the figs. Drizzle with the remaining syrup and serve.
