Background

I regularly make this French Rustic Rye Loaf in our Panasonic bread machine which has a specific setting for French bread - other makes have a similar one. It's the longest cycle - 6 hours - but that's to allow the yeast plenty of time to do its magic because there's no sugar in this recipe. Using the timer means you can wake to a wonderful aroma and lovely fresh authentic-tasting French bread!

Ingredients

1 tsp dried yeast
275g strong white bread flour
75g strong wholemeal bread flour
75g rye flour
1 tsp salt
1 Tbsp olive oil
310 ml water

Instructions

Put the ingredients into the bread machine in the order above - but check the manufacturer's instructions.
Choose the French bread setting (08 on the Panasonic SD-2501) and, if available, adjust the timer for when you want it to be ready.
Press Start. G to bed. Wake up & enjoy. Bon Appétit!

Tips

It's important to use very good quality STRONG flour - I find Canadian works best.
