Background

If you're after a hearty breakfast or brunch, this recipe's for you! It's very easy to make, so ideal for lazy weekends. Serve it with crusty bread or toast.

Ingredients

6 eggs, beaten
6 slices of bacon
100g goat's cheese (with rind)
100g green peas
1 handful basil leaves
Parmesan cheese
Salt and pepper
50g butter

Instructions

Turn on the grill.
Dice the bacon and slice the goat cheese 5mm thick.
Melt the butter in an oven-proof saucepan and fry the bacon until crisp. Add the peas and cook for 1-2 minutes more.
Add the chopped basil leaves and pour over the eggs, tilt the pan to spread the egg evenly. When the egg is jelly-like, place the goat cheese slices on top. Season to taste and sprinkle some grated Parmesan cheese on top.
Put the pan under the grill for 2-3 minutes until the cheese is golden and starts to melt.
Slice the frittata into wedges and serve with crusty bread.
