Background

This green pea and avocado spread is vegan, healthy, super quick and easy to make. Serve it with toasted sourdough or crostini. Alternatively, you can serve it as a dip with crudites or even as as pasta sauce.

Ingredients

1 cup green peas
1 small ripe avocado
1 clove of garlic, minced
1 handful of fresh mint leaves
1 Tbsp apple cider vinegar
Salt & pepper
Lemon juice

Instructions

Blanche the peas in boiling water for 2 minutes, then rinse them immediately under cold water and set aside.
Cut the avocado in half, remove the stone and scrape out the flesh into a small food processor.
Add the minced garlic, vinegar and mint leaves.
Whiz until you get a lightly textured paste. Taste it, then season with salt and pepper to your liking. Add lemon juice, if needed.
Serve immediately.
