Background

Theses carrot muffins are not only gluten-free, but they are healthy too, so you can enjoy them without guilt! They can also be dairy-free if you use vegetable-based margarine, oaty cream and oaty milk.

Ingredients

100g carrots
100g (brown) rice flour
100g buckwheat flour
100 ml yogurt (or oaty cream)
50 ml milk (or oaty milk)
1 egg
1 Tbsp honey (runny) or agave syrup
50g of margarine or butter (melted )
1 tsp baking soda
1 tsp baking powder

Instructions

Preheat oven to 190°C.
Grate the carrots and mix with the egg, yogurt, milk, honey and butter/oil.
In a large bowl, mix the dry ingredients , then pour in the carrot mixture. Mix well.
Spoon the mixture into a greased & lined muffin tin or silicon muffin cases.
Bake for 20 minutes until risen and browned.
Transfer the muffins to a wire rack. Cool.
