High-Protein Savoury Fritters
Background
These high-protein savoury fritters are quick and easy to make. They are nourishing, packed with protein thanks to cottage cheese, eggs and pea protein, and they’re also a great choice for bone health thanks to their calcium-rich ingredients. The spices and fresh herbs give them plenty of flavour, while spring onions add a bit of freshness and texture. They work well as a snack, light lunch, or even alongside soups and stews instead of bread. Serve them with a simple yogurt and cucumber dip for a fresh contrast and extra protein.
Ingredients
- 1 large egg
- 3 Tbsp cottage cheese
- 3 Tbsp pea protein powder
- ⅓ cup almond or soy milk
- 1 tsp black cumin seeds
- ½ tsp turmeric
- A pinch of cayenne and/or smoked paprika
- 1 garlic clove, minced
- 1 small handful fresh coriander, chopped
- ½ tsp baking powder
- Salt and pepper
- 4 spring onions, chopped
- To serve:
- Greek yogurt mixed with grated cucumber (raita)
Instructions
- Place the egg, cottage cheese, protein powder, plant milk, garlic and spices in a blender.
- Blend until smooth, then season with salt and pepper. Add the coriander and baking powder, then pulse again briefly until you have a thick, slightly textured batter.
- Transfer the mixture to a bowl and fold in the chopped spring onions.
- Let the batter rest for 5–10 minutes. It should be thick but still pourable—if it feels too thick, add a splash more milk.
- Heat a non-stick frying pan over medium heat and lightly grease with oil.
- Spoon small amounts of the batter into the pan to form fritters. Cook until the surface is set, then flip and cook for another couple of minutes until golden.
- Repeat with the remaining batter.
- Serve warm with a spoonful of yogurt and cucumber on the side, if you like.
