Background

This Honey and mustard chicken bake has a sweet & sour flavour though it gets this without any Asian ingredients! It's incredibly easy to make - a perfect mid-week dish for the family! Serve with mash and other veggie side-dishes. It's very nice cold too - so perfect for picnics and lunch boxes.

Ingredients

10 pieces of mixed chicken thighs & drumsticks
2 Tbsp Dijon mustard
4 Tbsp honey
2 cloves garlic, minced
Grated zest and juice of 1 lemon
Tabasco (optional)

Instructions

Mix the mustard, honey, garlic, lemon rind and lemon juice together.
Pour the sauce over the chicken legs, covering them well. If you have time, marinate for an hour.. Preheat the oven to 200°C.
Season the chicken with salt and pepper (and add a few drops of Tabasco if used) then place them in a roasting tray.
Bake for 15 minutes, then turn them around and brush each with the marinade. Cook until golden and sticky, for about 20-30 minutes. After 10 or 15 minutes, you should brush them once more with the marinade.
Serve them warm or cold.
