Background

If you love cookies/biscuits but you also like looking after your health and waistline, these honey and cinnamon spelt cookies will become your best treats. They are absolutely delicious, crunchy yet soft. They are also a healthy alternative to normal cookies as they are made with spelt flour and honey instead of sugar.

Ingredients

200g wholegrain spelt flour
1 tsp baking powder
1 tsp ground cinnamon
5 Tbsp honey
6 Tbsp sunflower oil

Instructions

Preheat the oven to 190°C and line a baking tray with parchment paper.
In a mixing bowl combine the flour, baking powder and cinnamon. Add the oil and honey, mix well.
Scoop teaspoons of the mixture onto the baking tray allowing plenty of space between them (they will double in size).
Bake for 8-12 minutes until golden brown.
Cool the cookies on a wire rack.
