Background

For Middle & Eastern Europeans, fresh curd cheese is part of their staple diet. In Hungary it's called túró and it's used for many different types of dishes. Körözött is a popular spread that we eat with fresh bread or toast. It's a delicious snack or appetizer, perfect for parties, picnics or in sandwiches.

Ingredients

200g curd cheese
50g butter, softened
1 tsp sweet paprika powder
1 tsp caraway seeds
1 small onion
Salt and pepper

Instructions

Chop the onion very finely.
Beat the butter with a hand-held blender until creamy and mix it with the curd cheese.
Add the spices and onion, then season and stir well.
Chill until needed.

Tips

The traditional Liptói körözött was made with sheep-milk curd cheese. Curd cheese is not easy to find in the West, though now Polish groceries sell them. If you can't find any, try using dense cottage cheese or mix some Feta with cream cheese.
You can also add half a teaspoon of mustard to the spread and serve it with chopped chives or parsley.
