Background

This warm salad is surprisingly filling and it's super-easy to create. It makes a quick & simple supper during the week, or is perfect for a lazy lunch or brunch at the weekend. Serve it with crusty bread or toasted pita.

Ingredients

1 Tbsp olive oil
1 red onion
2 cloves garlic
4 slices bacon
200g curly kale, sliced
1 tin lentils (400g)

Instructions

Peel the onion, cut in half and slice thinly. Slice or dice the bacon. Thinly slice the garlic.
Drain the lentils; rinse and drain the kale.
Heat the oil in a large frying pan and soften the onion. Add the bacon strips.
When the bacon is almost done (brown & crispy) add the garlic and fry for one more minute.
Add the kale and the lentils. Stir then lower the heat and, under cover, cook for 5 minutes.
Season to taste. Serve warm.

Tips

The bacon can be smoked or unsmoked.
The lentil can be green or brown.
For the perfect brunch just add a fried egg!
