Background

This leek and cheese omelette is super easy to make - on the table within 10 minutes. Try to use nutty hard cheese such as Gruyere, Emmental or matured Cheddar. Serve it with a crispy salad.

Ingredients

1 leek
1 tsp dried oregano or fresh thyme
4 large eggs
50g cheese, grated

Instructions

Thinly slice the leek.
Heat a spoonful of oil in frying pan, and sauté the leek for 5 minutes. Take half the mixture out onto a plate.
Lightly whisk two eggs in a small bowl with the herbs. Pour this into the pan, allowing to spread out evenly.
When the surface has almost set, scatter half the cheese on top.
When it starts melting, fold the omelette in half and cook for another minute or so, then slide it to a plate.
Repeat with the other eggs and the remaining fried leek.
