Ingredients: 1 Raw mango, peeled and grated; ¼ tsp Turmeric; ½ cup Sesame seeds, dry roasted; ½ tsp Mustard seeds; ¼ tsp Fenugreek seeds, dry roasted; Salt as required; 4 Tbsp Oil; ½ tsp Mustard seeds; 1 tsp Cumin seeds; 6 Dry red chillies; A pinch of asafoetida; A sprig of curry leaves

Background

I love the tanginess in the raw mango and have tried to cook it in many ways. When this pungency is balanced with some other ingredients like masalas, salt and chilli, it creates a very tasteful result. This Mango and sesame seeds chutney goes well with steamed rice or roti.

Ingredients

1 Raw mango, peeled and grated
¼ tsp Turmeric
½ cup Sesame seeds, dry roasted
½ tsp Mustard seeds
¼ tsp Fenugreek seeds, dry roasted
Salt as required
4 Tbsp Oil
½ tsp Mustard seeds
1 tsp Cumin seeds
6 Dry red chillies
A pinch of asafoetida
A sprig of curry leaves

Instructions

Heat oil in a heavy bottomed vessel, add mustard seeds, cumin seeds, asafoetida, red chillies and curry leaves.
Immediately add the grated raw mango and turmeric. Cook on low flame for 7-8 minutes without lid until the oil separates.
Grind together sesame seeds, dry roasted mustard, dry roasted fenugreek seeds and salt.
Add the above powder to the cooked raw mango and mix and switch off the flame.
