Background

This middle-eastern inspired roasted red pepper spread with walnuts is a very versatile dish - it can be used as a sandwich filling; a pizza or pasta sauce; a dip with crudités or to spread on party nibbles and appetizers. It can be whizzed up in just 5 minutes. I keep a jarful in the fridge for "emergency" use.

Ingredients

100g roasted red pepper
50g walnuts
2 tsp red wine vinegar
½ tsp ground cumin
¼ tsp sweet paprika
¼ tsp cayenne pepper
1 Tbsp tomato purée
1 clove of garlic
1 tsp olive oil

Instructions

Dry-fry the walnuts in a frying pan until fragrant, then let them cool.
Put all ingredients into a blender and whizz until you get a thick, textured paste. Taste and season with salt and pepper.
Chill until needed.

Tips

If you don't want it spicy, use just sweet paprika instead of cayenne pepper. You can also add a pinch of sugar to make it sweeter.
