Background

Sausage and sauerkraut is a very popular dish, famously in Germany but also all over middle Europe, because it’s so quick and easy to make, particularly if leftover or smoked sausages (such as frankfurters) are used. I normally make this dish with leftover grilled sausages, such as chipolatas, that my kids love. If you want a proper German dish, use German bratwurst and add a couple of spoonfuls of white wine (instead of or in addition to the sauerkraut’s own juice) to the dish, then reduce it. In Hungary we sometimes add a spoonful of cider vinegar and sugar to it as well - my recipe below is a healthier version. Serve it with boiled/baked potatoes or crusty bread. Perfect lunch or supper!

Ingredients

Sausage and sauerkraut
1 clove of garlic (optional)
½ tsp caraway seeds (optional)
1 bay leaf
2 cups of sauerkraut
4-8 Sausages of your choice

Instructions

Grill, bake or boil the sausages of your choice and set aside.
Finely chop the onion and garlic ( if used). Heat a spoonful of vegetable oil and gently sauté the onion until soft and translucent. Add the caraway seeds stir for a minute then add the bay leaf, the sauerkraut and its juices, then stir until the liquid has reduced.
Add the sausages (you can cut them into bite-sized chunks, if you like) and season with salt and pepper.
Serve hot.
