Background

The classic way to cook this type of meat is long and slow, but we don't always have the time. This Spiced lamb shanks in the pressure cooker recipe is a way to achieve a great flavour in a far shorter time.

Ingredients

2 Tbsp olive oil
2 lamb shanks
2 onions, chopped
3 cloves of garlic, finely chopped
2 bay leaves
1 tsp ground coriander
2 tsp ground cumin
1 tsp smoked paprika
2 tsp Ras el hanout
1 star anise
1 cinnamon stick
1 large carrot
1 Romano red pepper
2 tins of chopped tomatoes
1 cup broad beans
To serve: Chopped parsley

Instructions

Place the pressure cooker over a medium to hot flame and add the oil.
Put in one of the shanks and brown all over in the oil, then do the same with the other and put both aside.
Stir in the onions and garlic then, when they're softened, add the other ingredients except the broad beans.
Turn up the heat, put on the lid and bring up to pressure. Cook for 30 minutes then allow to depressurise by itself. Stir in broad beans and cook for a couple of minutes.
Serve with rice or pasta, sprinkled over with parsley.
