Apple and ginger oat bar

This apple and ginger oat bar is vegan and gluten-free, if appropriate oats are used. It’s also sugar-free and has little oil, which can be omitted if you add half a cup of ground nuts (walnuts or pecans would work well!). These are lovely snacks during the day or with your morning coffee or afternoon tea.

Ingredients
  

  • 2 ripe bananas
  • 1.5 cups rolled oats gluten-free, if needed
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 apples grated
  • 1 tsp ginger powder
  • 1/2 cup raisins optional
  • 2 Tbsp vegetable cup oil

Method
 

  1. Preheat the oven to 180°C. Grease and line a shallow, about 20×30 cm, baking dish.
  2. Using a fork, mash the bananas, then mix in the vanilla essence, cinnamon, ginger and oil.
  3. Add the oats, then combine well.
  4. Add the grated apple and mix well. Fold in the raisins, if used.
  5. Transfer the mixture to the prepared dish, spreading it out evenly.
  6. Bake for 20-25 minutes until golden.
  7. Take the tin out of the oven and let it cool for a few minutes, then transfer the cake to a wire rack.
  8. When it’s completely cool, cut it into squares or bars.
