Baked pork meatballs

Meatballs are really easy to make yourself – and much cheaper and healthier than the ready-prepared versions they sell in supermarkets. The only thing you’ll need to get is good quality minced meat, then mix it with some herbs and a binding ingredient (such as breadcrumbs, cooked rice, egg, or flax-egg) and you’re ready to cook them.  These baked pork meatballs are cooked in the oven, not fried, so they are even more healthy. Serve them with pasta/rice and tomato sauce for a main meal. Alternatively, they are perfects as party nibbles or can be taken to a picnic or to work in your lunch box with a crunchy salad.

Ingredients
  

  • 450 g good quality minced pork
  • 1 tsp garlic powder
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp ground cumin
  • Salt & pepper to taste
  • 2 Tbsp chopped fresh herb of your choice such as parsley, coriander, basil, dill or mint
  • 1 egg or flax-egg optional

Method
 

  1. Preheat the oven to 180°C.
  2. Put all ingredients in a mixing bowl and combine well.
  3. Line two baking sheets with parchment paper.
  4. Using a spoon add dollops of the mixture into your palm and shape balls, size of a lollipop.
  5. Put the meatballs on the lined sheet and bake for 20-25 minutes until golden brown.
  6. Rotate the ball a couple of times during the baking so they can brown evenly. Be careful not to overcook them – otherwise they will be too dry.
  7. Transfer the balls onto a plate and serve them warm or at room temperature.
