Green pea hummus

I make hummus regularly and I like to jazz it up according to the season or occasion. This green pea hummus is perfect for Summer parties, picnics and barbecues. It’s very much liked by kids – so ideal for kids parties and lunch boxes (instead of cayenne use paprika for them).

Ingredients
  

  • 1 cup of green peas can be frozen
  • 2 cups of cooked chickpeas drained
  • 2 tbsp tahini
  • 2 cloves of garlic chopped
  • 2 pinches of cayenne/paprika
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • 2 tbsp chopped mint leaves
  • Salt and pepper
  • Paprika & mint leaves to garnish

Method
 

  1. Steam or boil the peas for 2 minutes, then rinse them in cold water. Drain.
  2. Put all other ingredients in a blender. Blend for a minute, then add the peas. Pulse until you get the desired texture and thickness (add some water to thin it down, if preferred).
  3. Taste it and adjust the seasoning – add more cayenne, mint or lemon juice to your liking.
  4. Transfer the hummus into a serving bowl, then garnish with paprika and mint leaves.
