Apple and walnut crumble

The topping of this apple and walnut crumble is made with oats, which makes it a bit more granola-like, when it's baked. You can use gluten-free oats, if needed, and dairy-free spread for a vegan or milk-free version. Serve it with custard, crème fraîche or plant-based vanilla yogurt/cream.

Ingredients
  

  • 3 green cooking apples
  • Juice of ½ lemon
  • ½ cup sultanas
  • 1 handful chopped walnuts
  • 75 g unrefined muscovado sugar
  • ½ cup ground walnuts
  • 2 tsp cinnamon
  • ½ cup flour gluten-free, if needed
  • 1.5 rolled oats gluten-free, if needed
  • 75 g butter or dairy-free spread

Method
 

  1. Preheat the oven to 180°C.
  2. Peel and core the apples, then chop them into bite-sized chunks.
  3. Arrange the apple pieces in baking dish, scatter the walnuts and sultanas on top, then squeeze the lemon juice over. Dust with half of the sugar and cinnamon.
  4. Mix the flour, oats, ground walnuts and remaining sugar& cinnamon in a bowl.
  5. Rub the butter/spread with the mixture until you get a coarse crumble.
  6. Cover the apples evenly with the crumble mixture, then slightly press down the top with a spoon.
  7. Bake for 20-25 minutes until the top is golden and crispy.
  8. Serve it warm.
