Bacon and cheese muffin

Savoury muffins and scones are perfect for drinks parties, snacks, trips and picnics. This Bacon and cheese muffin is absolutely delicious and very easy to make. You can also serve them with hearty soups and stews instead of bread.

Ingredients
  

  • 200 g flour can be wholemeal or gluten-free
  • 1 tsp baking powder
  • A couple of pinches of salt
  • 1 tsp unrefined sugar
  • 100 ml buttermilk
  • 1 large egg
  • 50 ml vegetable oil
  • 50 g pancetta or lardons
  • 50 g hard cheese Cheddar, Emmental, etc., cut into small cubes
  • ½ onion or 3 spring onions chopped

Method
 

  1. Preheat the oven to 180°C.
  2. Mix the flour, baking powder, sugar and flour.
  3. Fry the bacon in a frying pan until crispy.
  4. Beat the egg lightly, then mix with the oil and buttermilk and add this to the flour mixture. Stir in the bacon pieces (including the fat) and add the cheese cubes.
  5. Line a muffin tin with paper baskets or put some silicon moulds on a tray. Spoon the batter into them (up to ⅔rd) then grate some cheese on the top and bake for 20 minutes or so until golden.
  6. Leave them to cool on a wire rack.
