Braised leeks with orange

This quick and easy braised leeks with orange goes fantastically with pork chops or with a Sunday roast. It also goes well as a side-dish in a festive menu - and can be prepared in advances and re-heated.

Ingredients
  

  • 50 g butter or dairy-free margarine
  • 500 g leek
  • 2 tsp cornstarch
  • 200 ml freshly squeezed orange juice
  • zest of 1 orange

Method
 

  1. Thinly slice the leeks (including most of the green part too).
  2. Melt the butter, add the leek slices, season with salt and pepper. Cover with a lid and gently sauté at a low temperature for about 8 minutes until tender.
  3. Add the cornstarch, stir gently fry for 1 minute until, then add the orange juice and sprinkle with most of the zest. Bring to a simmer, and cook until the sauce thickens.
  4. Scatter the remaining orange peel over it before serving,
