Cabbage, edamame and shiitake stir-fry

This Chinese cabbage, edamame and shiitake stir-fry is super easy to make and can be served in various ways - as a side dish in an Southeast-Asian menu; as a main dish with rice or noodles  (which is vegan); as a cold salad mixed with rice; or you can supplement it with stir-fried meat or fish for a hearty meal. It is healthy and yummy too.

Ingredients
  

  • 1 onion
  • 2 cloves of garlic
  • 2 cm piece ginger
  • 1 carrot
  • ½ Chinese cabbage
  • 1 Tbsp groundnut oil
  • 2 cups edamame beans
  • 125 g shiitake mushrooms
  • 3 Tbsp soy sauce
  • 3 Tbsp Shaohsing rice wine or Sherry
  • To serve: Sesame seeds coriander leaves

Method
 

  1. Thinly slice the onion, carrot, cabbage garlic and ginger.
  2. Heat the oil in a wok. When it starts smoking add the onion, carrot and ginger. Stir-fry for 2 minutes, then add the garlic and cabbage. Stir-fry for another minute, then add beans, mushrooms, soy sauce and rice wine. Sir-fry for 5 minutes.
  3. Turn down the heat, put a lid on and cook for another 3-5 minutes, until all vegetables are tender.
  4. Scatter some sesame seeds on to and drizzle a few drops of toasted sesame oil over it too.
  5. Garnish with a coriander leaves and serve.
