Cabbage, edamame and shiitake stir-fry
This Chinese cabbage, edamame and shiitake stir-fry is super easy to make and can be served in various ways – as a side dish in an Southeast-Asian menu; as a main dish with rice or noodles (which is vegan); as a cold salad mixed with rice; or you can supplement it with stir-fried meat or fish for a hearty meal. It is healthy and yummy too.

- Thinly slice the onion, carrot, cabbage garlic and ginger.
- Heat the oil in a wok. When it starts smoking add the onion, carrot and ginger. Stir-fry for 2 minutes, then add the garlic and cabbage. Stir-fry for another minute, then add beans, mushrooms, soy sauce and rice wine. Sir-fry for 5 minutes.
- Turn down the heat, put a lid on and cook for another 3-5 minutes, until all vegetables are tender.
- Scatter some sesame seeds on to and drizzle a few drops of toasted sesame oil over it too.
- Garnish with a coriander leaves and serve.
