Cauliflower Pepper Masala

Cauliflower was introduced to Indian cuisine by the British over 300 years ago. Since then it has become a regular feature in the daily cooking across India and is considered a favourite in  northern part of India. This Cauliflower Pepper Masala is a simple dish and goes very well with roti or can be had as an appetizer.

Ingredients
  

  • 500 gm Cauliflower boiled with turmeric and salt
  • ½ tsp Cumin seeds
  • 2 Red chilli
  • ½ Inch ginger finely chopped
  • 4 Cloves garlic finely chopped
  • 1 Medium onion
  • 1 Green chilli
  • 1 tsp Tomato purée
  • 3 Tbsp Oil
  • ½ tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Red chilli powder
  • 1 Cup sliced red and green peppers
  • Salt to taste
  • ½ tsp Crushed pepper
  • Coriander leaves to garnish
  • ½ tsp Lemon juice

Method
 

  1. Add oil to a flat bottomed vessel and once it is hot, add cumin seeds, red chilli, chopped ginger and garlic and fry for 3 to 4 minutes.
  2. Add chopped onion and sauté till it is transparent.
  3. Add salt, green chilli, tomato purée and sauté till purée dries out.
  4. Add Turmeric powder, coriander powder, red and green peppers and fry for 3-4 minutes.
  5. Add the boiled cauliflower and fry for 5 minutes and mix well.
  6. Add crushed pepper and stir well.
  7. Remove the dish aside and add lemon juice and garnish with coriander leaves.
