Preheat the oven to 200°C.
Mix the flour with the baking powder.
Add the diced butter. Using your fingers work the flour and butter into fine crumble.
Peel the apples and grate them using a large-hole cheese grater.
Add the thyme leaves, grated cheese and apples to the crumble. Mix thoroughly.
Beat the eggs lightly into a measuring jar. Add enough milk to make 150 ml liquid. Pour this into the middle of the batter, then make a dough with a spatula.
Transfer the dough onto a floured copping board, knead it gently then roll it out to 2cm thick. Using a 6-7 cm diameter cutter or the rim of a glass push out patties. Use up any leftover dough too!
Place the patties on a baking tray lined with parchment paper, 3-4 cm apart.
Brush the tops with milk and sprinkle grated cheese on them.
Bake for about 12-15 minutes until golden brown. Transfer them to a wire rack to cool.
