Cheese and apple scones

These cheese and apple scones are not only lovely snacks on their own but can be eaten with hearty soups or stews instead of bread.  You can use any hard cheese  you like – I prefer mature Cheddar and Emmental.

Ingredients
  

  • 300 g self-raising flour
  • ½ tsp baking powder
  • 75 g soft butter
  • 75 g grated hard cheese
  • 6 sprigs of thyme
  • 1 apple
  • 1 medium egg
  • Approx. 150 ml milk
  • To garnish: about 30g grated cheese some milk

Method
 

  1. Preheat the oven to 200°C.
  2. Mix the flour with the baking powder.
  3. Add the diced butter. Using your fingers work the flour and butter into fine crumble.
  4. Peel the apples and grate them using a large-hole cheese grater.
  5. Add the thyme leaves, grated cheese and apples to the crumble. Mix thoroughly.
  6. Beat the eggs lightly into a measuring jar. Add enough milk to make 150 ml liquid. Pour this into the middle of the batter, then make a dough with a spatula.
  7. Transfer the dough onto a floured copping board, knead it gently then roll it out to 2cm thick. Using a 6-7 cm diameter cutter or the rim of a glass push out patties. Use up any leftover dough too!
  8. Place the patties on a baking tray lined with parchment paper, 3-4 cm apart.
  9. Brush the tops with milk and sprinkle grated cheese on them.
  10. Bake for about 12-15 minutes until golden brown. Transfer them to a wire rack to cool.
