Spaghetti with tuna and lemon

This is a lovely, refreshing pasta that is super-easy to make. A perfect choice for a midweek supper or weekend lunch, served with green salad.

Ingredients
  

  • 250 g spaghetti
  • 1 small onion
  • 1 clove of garlic
  • 1 red chilli
  • Half a tin of tuna 200g
  • Juice of 1 lemon
  • 1 handful of parsley leaves chopped
  • Olive oil

Method
 

  1. Cook the pasta according to the packet instructions, then drain and return to the pan. Keep warm under a lid.
  2. Meanwhile, chop finely the onions and slice thinly garlic. Deseed the chillies and chop the flesh finely.
  3. Heat 1 tablespoon oil in a frying pan and add the onion, garlic and chilli. Stir-fry for 2 minutes until softened.
  4. Drain the tuna and add to the pan with one more spoonful of oil.
  5. Add the parsley and the lemon juice. Stir and cook for about a minute then fold in the spaghetti.
  6. Warm through, season with salt and pepper.
  7. Serve warm, perhaps with some grated Parmesan scattered on top.
