Chicken breast wrapped in bacon

When you have friends coming around for dinner it’s good to know a few reliable, delicious (and easy)  recipes. This chicken breast wrapped in bacon ticks all the boxes -  you can even prepare them in advance and cook it when your guests arrive. It can be served as a main course (with a mash and a salad) or as an appetizer (goes really well with a glass of Prosecco!). If you have any leftover - add to a leafy salad ( sliced) et voilà you have a lovely lunch!

Ingredients
  

  • 2 chicken breast fillets
  • 2 Tbsp grated parmesan cheese
  • 2 garlic cloves minced
  • 1 garlic clove chopped
  • 8 slices of streaky bacon approx.
  • 1 red onion
  • olive oil to drizzle
  • 1 Tbsp chopped rosemary

Method
 

  1. Cut the chicken breast into 2 cm thick slices. Put them in a bowl. Season them with salt pepper. Add the 2 garlic cloves, minced, and the grated cheese. Coat the chicken pieces well.
  2. Wrap each mini fillet with slices of bacon and place them on a plate.
  3. Slice the onion into rings and lay these in a roasting dish. Add the chopped garlic and a few pinches of the rosemary. Drizzle with a little olive oil.
  4. Sit the wrapped chicken breasts on top of the onion and sprinkle with the rest of the rosemary. (You can rest this in the fridge until you’re ready to cook).
  5. Cook in the oven for 20-25 minutes, until bacon is crispy and the chicken is cooked through.
