Chicken breast wrapped in bacon
When you have friends coming around for dinner it’s good to know a few reliable, delicious (and easy) recipes. This chicken breast wrapped in bacon ticks all the boxes – you can even prepare them in advance and cook it when your guests arrive. It can be served as a main course (with a mash and a salad) or as an appetizer (goes really well with a glass of Prosecco!). If you have any leftover – add to a leafy salad ( sliced) et voilà you have a lovely lunch!

Method
- Cut the chicken breast into 2 cm thick slices. Put them in a bowl. Season them with salt pepper. Add the 2 garlic cloves, minced, and the grated cheese. Coat the chicken pieces well.
- Wrap each mini fillet with slices of bacon and place them on a plate.
- Slice the onion into rings and lay these in a roasting dish. Add the chopped garlic and a few pinches of the rosemary. Drizzle with a little olive oil.
- Sit the wrapped chicken breasts on top of the onion and sprinkle with the rest of the rosemary. (You can rest this in the fridge until you’re ready to cook).
- Cook in the oven for 20-25 minutes, until bacon is crispy and the chicken is cooked through.
